Preheat the oven to 325°F. Prepare a 9x13 inch baking pan with cooking spray.
12 oz. Omanhene 80% Extra Dark Chocolate, coarsely chopped
1 tsp. vanilla extract (optional)
Put the chocolate and oil in the top of double boiler set over steaming water and melt gently. Slowly stir to fully incorporate the oil. Remove from the heat and let cool to lukewarm. Whisk egg whites and sugar in medium-sized bowl for a few minutes by hand until foamy. Pour warm chocolate into sugar and egg mixture. Stir until well blended. Add flour, salt, and vanilla extract and stir until well mixed. Pour into the prepared pan and spread batter evenly. Bake for 30 to 35 minutes.
